Football season is officially here and that means one thing for local foodies – tailgating time in Cape Girardeau. Having a few delicious (yet easy to make) tailgating dishes up your sleeve can ensure that you're all fueled up and ready to score big on game day.
Easy Slow Cooker Pulled Pork Slider
Sliders are a tailgating menu must for two very important reasons. First, they are delicious. And secondly, their petite size means you can indulge but still save room for all the other succulent snacks surrounding you. A total win/win!
2 medium yellow onions, thinly sliced
4 medium garlic cloves, thinly sliced
1 c. chicken stock or low-sodium chicken broth
1 Tbsp. packed dark brown sugar
1 Tbsp. chili powder
1 Tbsp. kosher salt, plus more as needed
1/2 tsp. ground cumin
1/4 tsp. ground cinnamon
1 (4½ - to 5 lb.) boneless or bone-in pork shoulder (also known as pork butt), twine or netting removed
2 c. barbecue sauce (optional)

2 pickled pepperoncini peppers
½ head iceberg lettuce
1 large tomato, halved and seeded
¼ lb. deli-sliced genoa salami
¼ lb. deli-sliced ham
¼ lb. deli-sliced prosciutto
¼ lb. deli-sliced roast turkey
¼ lb. deli-sliced provolone cheese
½ c. mayonnaise
1 Tbsp. extra-virgin olive oil
1 tsp. dried oregano

1 10 -to-12-inch round loaf Italian bread

Pressure Cooker Chili
Chili has long earned its place in the tailgating hall of fame; easy to make and even easier to put your own personalized spin on, chili can feed a crowd and satisfy even the pickiest palates. Try Alton Brown's version that you can whip up using your pressure cooker.
3 lbs. stew meat (beef, pork, and/or lamb)
2 tsp. peanut oil
1 1/2 tsp. kosher salt
1 (12-oz.) bottle of beer, preferably a medium ale
1 (16-oz.) container salsa
30 tortilla chips
2 chipotle peppers canned in adobo sauce, chopped
1 tsp. adobo sauce (from the chipotle peppers in adobo)
1 tsp. tomato paste
1 tsp. chili powder
1 tsp. ground cumin
